Only reason I got my PSP was for monster hunter freedom. But after a few hundred hours of playing you'll start getting frustrated allot on the bigger monsters lol.

thats a hack but you can know if its weak by paying attention to certain actions, such as fleeing, limping, lowering ears, lowering head, etc...

    Default Cfw

Ok, first, "Monster's Health" is only widely known supported for the first and second version of monster hunter, (monster hunter freedom and monster hunter freedom 2). Also known as MHF 1/2. I'm currently working on one for the MHFU, it's taking forever since the lack of small item bank. (Simpler terms: there's so many things in MHFU that it'll take a very long time to find nice, working cheats such as monsters' health for it)

Anyway, back to your question. First of all (again) you have to have a CFW (Custom FirmWare) installed onto your psp. Example: OFW (official [psp] firmware) is 5.03. Using ChickHEN r2 (1st) and 5.03 Gen-C (second) i can turn my 5.03 OFW into 5.03 GEN-C. This is awesome because it resets into a normal psp on PowerOff (using the switch or the popup VSH menu). Resetting it is a simple matter of scrolling down to the "Slim".tiff picture in the PSP picture folder and waiting for the screen to go into black and white with strange stripes and then restart, then running GEN-C. This will install it and enable you to use plugins such as CWCheat, which is the ANSWER TO YOUR QUESTION. (I know, finally, right? lol)

CWCheat not only allows you to make cheats, load cheats, and choose from hundreds of cheats from a cheat.db (cheat database), but it also allows the capturing of Screenshots (my second-favorite feature).

CWCheat can only be enabled on a CUSTOM FIRMWARE. If you update your PSP to 5.03 GEN-C, then you can simply send me a message in my email and I'll tell you how to enable your CWCheat. Happy homebrewing
